"My zucchini went bad." "The lettuce was rotten." "I bought lots of fruits and vegetables, but most of them turned before I had the chance to eat them."

These are typical  of the statements I frequently hear soon after my patients begin to try and eat more fruits and vegetables. Let's examine why this happens.

Many fruits release ethylene gas, while at the same time, other fruits and vegetables absorb it.  If you store the two together, the ones that absorb the gas will ripen too quickly and begin to rot. So here’s the low down.

The gas releasers: apples, apricots, cantaloupes, figs, honeydew.  The gas absorbers: bananas, broccoli, cauliflower, lettuce and other leafy greens.

Keeping your gas releasers away from your gas absorbers will help the absorbers last longer. However, if you bring home bananas and they are not yet ripe, you can ripen them more quickly by placing them together with a gas releasing fruit.

Try to increase your consumption of fruits and vegetables. Remember, "Five a Day" for kids.
